I am after the Local Traditional Cypriot receipes for the above Lamb and Pork, can anyone help?

Hi Thumpstar,

I too was looking for authentic Cyprus/Greek Recipes like you for Lamb Kleftico & Stiffado etc..

I did a "Google" search which brought up various recipes - but as you are probably aware there are so many variations to these dishes, so it is just a question of looking at them and see which is nearest to the one you have enjoyed most - some Restaurants etc use Lamb Shanks, some use Lamb Shoulder and various other Lamb joints etc, however this shouldn't detract fom the overall taste. Some places cook the potatoes, carrots etc in with the Lamb,others don't.

I just looked at the recipes, took into account what my other half preferred and tried and tested from there - his verdict "Best Lamb Kleftico" he tasted - but that is just his take on things.

I did the same with"Beef Stiffado" - I know how I like it and just adjusted the various recipes to suit - "Bingo" it was great, even though I say so myself.

and some places might use goat rather than lamb...

The best kleftiko is made in a traditional clay oven........if you go out into the sticks you will find many restaurants allot use goat, tastier in my opinion, cant remember the name but we went to one out Kornos/ Stavrovouni way delicious.

Works well in a Sun Oven too (nor does it heat up the kitchen).

Unheard of to use goat, It is not Kleftiko if it is not slow cooked lamb in a traditional oven with the potatoes and served with a raw onion. Anything else is simply either cooked lamb or cooked goat.

It can't be LAMB kleftico if it's goat can it!

Reminds me of a Taverna in Makenzy where I took a pal and she asked about the Kleftico 'slow cooked lamb'? Owner said 'yes that's right except it is pork' lol!

sarcastic obligatory prefect comment aside

observation reveals the following:-

kleftiko consistrs of part of a lamb
olive oil
lemon
spuds
slow cooked, covered for how long?

does it include
oregano?
bay leaves?
thyme?

mint - no, there' no mint in it

???????

Unless lamb and only lamb is cooked WITH the potatoes very very slowly it has no right to be called Kleftiko IMHO Smile
