I just peel the potatoes, cut in lengthway pieces, pour a bit of olive oil over them, then freshly squeezed lemon juice (and/or the zest). I use a bit of seasoning salt, or if you don't have that a bit of salt would do. I love the Cypriot dried oregano, the essence of a lot of cooking here.
Pour a little water in (from the side to avoid washing all the seasoning off)
Cover for half an hour with foil, then remove foil, return to oven (180 c) until done to your taste.
I normally put in some pork chops or a cut up chicken in, yum.
I learnt from my Greek mother in law (yes Greek, not Cypriot) but watching my aunts in Paralimni they do it the same way too.
