At every meat counter I've seen there are always trays of chicken gizzards for sale, I've never seen a recipe using these so what are they used for?

Plenty of recipes for gizzards online. I googled it and got over 50,000 results.

I once bought some wondering if my little dog would like them, but she didn't.

When I was in the Caribbean they sold these in all the shops and I saw loads of people buying them along with other bits of the chicken I usually chuck out.

Yes, most recipes just seem to boil or fry but I'm more curious as to how they feature in Cypriot cuisine.

To the best of my knowledge these are used mainly these days as a cheap way of making chicken stock which is used a lot in Cypriot cooking.
Years ago my mother in law used to make a concoction with them fried and then eggs stirred into the mix. Don't know if this is still done but would not personally recommend it. Lol,

There is only a little bit of meat on them - the inside is muscly and inedible - agree the best thing to use them for is stock.

Haven't had these in years, but whenever I have they have always been in soup, usually boiled. Either what we call Avgo Lemoni or in Trachana.

I don't recall eating them in any other way.
