I see many Cypriots, mainly elderly, buying dried beans and pulses, what do they make with them ?
Also what is the 'honeycomb log' stuff that they buy in plastic bags for ?
Also I have seen alot of strange looking vegetables, one that looks like a green turnip with a couple of leaves coming out of the side, what is it, how do I cook it ? And another one that looks like a white turnip with little bobbles on the side, begins with a k ?
Interested in Cypriot cooking and Lifestyle but books i have deal with more meat & fish recipies.
The "honeycomb" stuff is TRAHANAS. You can cook it with water or chicken stock to make soup, sometimes added chicken, I believe. It's bulgar wheat mixed with yogurt and then dried. It re-hydrates as you cook it. It's an acquired taste; a bit sour but more-ish if you like it.
