Yemista - Stuffed Peppers (with Minced Pork and Rice)

Stuffed Peppers with Pork Mince and Rice
Makes about 6-8 Peppers worth



Ingredients

200g Rice (dry weight)
6-8 large peppers (red, yellow, green) cut in half
25-50ml Extra Virgin Olive oil
2 medium onions diced (400g)
Minced Pork (500g)
2 tsp dried mint
1 tsp dried oregano
1 tsp sea salt
1 tsp black pepper
¼ tsp cinnamon powder
2 cloves of garlic finely chopped/crushed (or 1 tsp garlic purée)
1 large handful of fresh parsley (25g)
1 veg stockpot (or stock cube)
500ml hot water
50g cheese (a soft melting cheese like Chedder or Mozzarella) grated


Method

Make the rice using your normal method (I prefer the microwave, you do what works best for you)


Soften and brown the onions


add the mince pork


cook until nicely coloured


add the spices (2 tsp dried mint, 1 tsp dried oregano, 1 tsp sea salt, 1 tsp ground black pepper, ¼ tsp cinnamon, 2 cloves of garlic crushed/finely chopped) and mix in well, allowing to cook in for a minute


add 1 veg stockpot (or stockcube, something like Knorr) mix in well


Add 500ml of hot water, making sure you get any bits stuck at the bottom of the pan


cook it on medium hot heat until almost dry again (so the meat can soften and the flavours mix together)


add the cooked rice


add a good handful of chopped fresh parsley (about 25g)


mix in well


Now get your peppers and slice them in half (through the stalk) and clear out all the seeds etc


stuff each pepper with some of the mix, press in well but don't over fill it


top each one with a little cheese


bake in a 200°C oven for about 30-40 minutes, so the pepper softens and the cheese melts


and serve
