Does anyone know if you absolutely must use pickling vinegar or can I cheat and use the ordinary stuff?

You can pickle using redwine vinegar, cider vinegar, white wine vinegar and normal distilled/malt vinegar... just make sure the latter is "vinegar" and not "malted condiment" (the cheap stuff you get in chippy's)

ps take note of the recipes that pickling tends to use salt and sugar as well as vinegar to help preserve...!

Alternatively, if you don't want to store, try baked beetroot as a veg, or a chocoltae & beetroot cake:

1 large cooked beetroot, about 175g in weight, roughly chopped
200g plain flour
100g cocoa powder
1 tbsp baking powder
250g caster sugar
3 eggs
2 tsp vanilla extract
200ml oil (sunflower/groundnut)
100g dark chocolate , (not too bitter), chopped into pieces

Place beetroot, flout, cocoa powder, sugar eggs & vanilla in food-processor & puree.

Dribble in oil very slowly with processor running.

Turn off, stir in chocolate and pour into loaf tin. Cook at 190'C for 1 hour, until skewer comes out (almost) clean.

Jinty you can use absolutely any kind of vinegar to pickle beetroot. And it works just as well if you peel it before or after boiling!
