spit roast lamb with which vegetables?

I hve ordered a leg of spit roast lamb to be delivered today.
I am wondering wch vegetables would go best with it? Apart from obvious accompaniment like roast potatoes (which do no like), would welcome suggestions. thanks

Well cooked roast Lamb is my most favourite meat. I personally like to have mashed potato together with a roast potato or two. For veg, the obvious choice has got to be peas and carrots. As an alternative you could do broccoli, cauliflower and parsnips. Gravy is a must as is mint sauce and redcurrant relish.

Roast vegetables

Any veg you like such as:

5 Courgettes, wash scrub, cut into 6 mm slices
4 large potatoes, peeled cut into 6 mm slices
3 or 4 cloves garlic sliced thinly
1 large onion, 6 mm slices
2 large toms, sliced
1 pepper, sliced

Put all into roasting tray, add plenty of olive oil, ensure all veg are coated.

Add seasoning and sprinkle with oregano.

pour about 50 - 60 ml water into corner of tray.

Put in oven, about 160 - 170, gently stir every half hour so all veg have a chance to colour. Cook for about 90 mins, or until potato (sweet potato, pumpkin) is cooked. (And the potatoes don't taste like roast potatoes)

Don't worry if some veg darken, the concentrated flavour is superb. Also serve with bread to mop up juices.

with our Turkey I made a medly of roasted veg -

Carrots sliced (rather than chunks so they could cook in same time as other things)
Parsnip sliced (again to similar sized pieces as the carrot)
Red Peppers (chunks, could use green, yellow etc but wanted the colour matching with orange carrot, creamy white parsnip etc)
Onion (used white but would have prefered red)

toss around in olive oil, a few chopped/crushed/sliced cloves of garlic, oregano, salt and pepper then roast in a nice hot oven....

I do a similar medley of vegetables (whatever is in the fridge really) but instead of Oregano - try a sprinkling of Cinnamon and Nutmeg.

I don't like mine well cooked, I have to have it a bit pink. Laughing

Lamb is my favorite meat. Spike the leg with rosemary and garlic serve with floured fried courgettes and cauliflower cheese. the cheese sauce is enough, along with some crisp roasties and mint sauce. Perhaps add a spoonfull of white onion sauce. Yummmm!
